Portioning
- Full fry carton (Regular or Large)
☆ Q.A. Standard: Frozen hash browns should be free of ice crystals. Cooked hash browns should be golden brown with no excessive breakage.

- Hash browns must be time/temperature controlled for safety (TCS)
- They must remain frozen until cooked
- All hot foods must maintain a minimum temperature of 135°F
- Hash browns must be handled carefully so that they do not break apart
- They break easily when cases or bags are dropped
Preparing and Holding
- Hash browns are cooked in a 350° F fryer from a frozen state
- Hash browns cook for 2 minutes 15 seconds
- Open a bag of hash browns by pulling apart the seam across the entire top of the bag
- Carefully pour hash browns into a fry basket by grasping the neck of the bag to control amount portioned
- Do not fill the fry basket more than 1/3 full
- Overfilling will cause the hash browns not to cook properly
- Close the bag of hash browns tightly and put back in the freezer
- Slowly lower the fry basket into the hot shortening
- Do not lower another basket into the same fryer for at least 30 seconds
- Press the hash brown timer button that is programmed for 2 minutes 15 seconds
- After 30 seconds, lift the basket just above the shortening and gently shake the basket to prevent the hash browns from sticking together
- When the timer sounds, press the button
- Lift the basket from the shortening and gently shake in an up and down motion to remove excess shortening
- Dump hash browns into empty bin; Bin 1 or Bin 2
- Always store the fryer baskets on the fryer bracket when not in use
- Press the 10-minute timer that corresponds to the bin; Bin 1 or Bin 2
- When the timer reaches 2 minutes 15 seconds, drop more hash browns
- When these hash browns are done, the 10-minute hold time on the older hash browns will have expired
- These must be discarded into the waste container

Individual Orders
- Always wear single use gloves when preparing or handling ready to eat food. Do not make any bare hand contact with the inside of the fry carton
- Take appropriate size fry carton from holder and place on end of fry scoop
- Scoop up hash browns and fill carton with a shaking motion
- Allow excess hash browns to drop back into fry bin
- FILL THE CARTON AS FULL AS YOU CAN GET IT
- Place the filled fry carton in the fry ribbon
- Rotate older cartons of hash browns toward the frontline
- When picking up cartons of hash browns, always grasp carton by the side to prevent hands from coming in contact with the hash browns
- Dine in - Place a deli or tray liner on the serving tray, and lay hash browns on the liner. This will prevent hash browns from coming into direct contact with the serving tray.
- Dine out – Stand carton of hash browns upright as the last item in the bag
Breakfast Plates
- When hash browns are ordered as a side on a breakfast plate, portion a regular size order of hash browns into a fry carton
- Empty the carton into a small compartment of a plate or clamshell container
- When picking up cartons of hash browns always grasp carton by the side to prevent hands from coming in contact with the hash browns
Close of Breakfast
- Serve all customers
- Skim particles from shortening
- Discard any remaining hash browns into the waste container
- Wipe down holding bin and surrounding area using a sanitized towel
- Remove hash browns from reach in freezer and place back in designated area of walk-in freezer
