Make notes and develop a plan
|
- General Manager and assistants do a thorough walkthrough and make notes
- Develop a 30-day plan including what needs cleaning and who will be responsible
- Break down large projects into smaller task
- Break restaurant down into areas. Assign ownership of each area to manager

Make daily and weekly cleaning chart a practice
|
- Make copies of the weekly cleaning chart and have all managers familiarize themselves with it
- GM should follow up daily to ensure that all items on the chart are accomplished

Discuss cleaning goals at weekly manager’s meeting
|
- Make daily and weekly cleaning accomplishments a part of the accountability discussion of each manager
- Talk about goals and responsibilities for upcoming week
- Recognize individual accomplishments at weekly meeting

Lead by example
|
- Don’t expect others to do a job you are unwilling to do
- Clean as you go throughout the day
- Do not accept sub-standard work from yourself or others

Develop a tools checklist and ensure store has all tools
|
- Go through all cleaning checklist and tools sections (refer to SFM order guide) and make sure store has everything needed to clean properly
- Keep all tools stored properly and in good repair
|
Train all managers and employees how to clean
|
- General Manager should have a cleaning class with all managers
- Develop a training schedule for assistants to train each employee
- Managers can train groups on all task or managers can train all employees on certain task
- Develop a certification sheet to sign off on for all employees

Use daily cleaning tasks
|
- Make sure that daily cleaning tasks become a part of daily shift plan
- Never allow an employee to clock out until daily cleaning task is complete
|
Make cleaning fun and motivational
|
- Develop internal cleaning contest
- Recognize outstanding performance at meetings and post on bulletin board
|
Follow up
|
- Be sure to follow up on all assigned cleaning task
- Write down assigned tasks and follow up weekly at manager’s meetings
|
Create good habits
|
- Make sure that cleaning is a part of all tasks
- Never allow cleaning as you go to be ignored unless it directly affects service
