  • Q.A. standard: A fresh, hot sandwich where you can taste every condiment in every bite. Buns are to be toasted to order. NEVER HOLD BUNS.

  • Squeeze Bottle (BBQ Sauce)

Work Safe

  • Wash hands before starting work and after handling anything not food related
  • Gloves -- If leaving workstation or changing tasks, wash hands and change gloves
  • Cook temp: Meat 155°F/17 seconds
  • Hold temp: 135°F minimum all cooked foods
  • Wash, rinse, sanitize all utensils and surfaces every 4 hours
  • Never operate the microwave without food inside. This could result in damage to the equipment and cause a fire.
  • To prevent cross-contamination, always store raw meat and dairy products away from produce and condiments
  • To cut a sandwich in half if requested, place biscuit splitter on top of sandwich and place free hand on top of the blade to hold the bun. Do not hold bun from side while cutting.

Assembly

  • BBQ sauce is held in a squeeze bottle and held at room temperature between 50°F – 70°F
  • Always wear single use gloves when preparing hamburgers
  • When a sandwich is ordered, place a bun (crown and heel) cut side up on the bun toaster chain
  • Pull down foil sandwich wrap. Ensure word special is facing away from you.
  • Once toasted, remove the bun from the toaster
  • Place the heel of the bun on the center of the sandwich wrap
  • Use red tongs to place 1 meat patty on the heel of the bun
  • Place one slice of American cheese on top of the meat
  • Use red tongs to place 1 meat patty on top of the American cheese
  • Place one slice of American cheese on top of the meat
  • Place 12 half slices of bacon in a crisscross pattern on top of the 2nd cheese slice
  • Place the heel, meat, cheese and bacon in the microwave
  • Press the appropriate timer button:
    • 1 sandwich                  Timer Button #1        
    • 2 sandwiches              Timer Button #2                                
  • While the heel, meat, cheese, and bacon are in the microwave, dress the crown
  • BBQ Sauce:  Use a squeeze bottle to apply 3/4 oz. of BBQ sauce to the crown. Starting on the outer edge of the crown, apply ½ oz of BBQ Sauce in a circular motion into the center of the bun (approximately 5 circles)
  • The goal for making a perfect sandwich is to have a taste of each condiment in every bite
  • When the timer sounds, remove the heel, bacon, meat and the cheese from the microwave
  • Place dressed crown on top of meat
  • Wrap using the foil sandwich wrap with the square wrapping procedures. Ensure the word “Special” is showing
  • Using a sharpie marker, mark the sandwich “BBQ”
