Q.A. Standard: A fresh, hot sandwich where you can taste every condiment in every bite. Toast should be toasted to order. NEVER HOLD TOAST. Sandwich should be neatly assembled.

TOOLS NEEDED

  • 7 ¾” Condiment spatula
  • Red handled perforated spatula
  • Red tongs
  • Deli liner
  • Sharpie
  • Biscuit splitter
  • Warming pan with lean grate
  • Solid lid for MPHC

WORKSAFE

Worksafe Ham & Bacon
  • Always wear Food-Mitt gloves when handling raw meat
  • To cut a sandwich in half if requested, place biscuit splitter on top of sandwich and place free hand on top of the blade to hold the bun. Do not hold bun from side while cutting
  • Never operate the microwave without food inside. This could result in damage to the equipment and cause a fire.

THAWING TURKEY AND HAM

Turkey Example
  • Ham Example
    Turkey and Ham are delivered and stored at 0°F +/- 10°F. Thaw 48 hours prior to cooking.
  • Turkey can be held for up to 7 days (including thaw time) maintaining temperature of 34° - 41°.
  • Ham can be held 30 days (including thaw time) maintain temperature of 34°F – 41°F
  • Ready by Date/Time: Exactly 48 hours from the pulled by date & time
  • Use By date/Time: 7/30 days from the pulled by date & time

PREPARING AND HOLDING

  • Program your microwaves as follow
    • Oncue Microwaves
      • Timer Button #7: 15 Seconds
      • Timer Button #8: 25 Seconds
    • Panasonic or Amana Microwaves
      • Timer Button #7: 25 Seconds
      • Timer Button #8 or #0: 30 Seconds
  • Turkey and ham will be heated in the microwave when ordered
  • Turkey Slices may need to be “balanced” to ensure you can taste the turkey in every bite. If a turkey slice is small, put 2 slices on the sandwich
  • Always use a clean deli liner when heating turkey or ham. Discard the deli liner after each use.
  • When ordered, place a clean deli liner into the microwave
  • Place turkey slice(s) or ham onto the clean deli liner Close the microwave door
  • Press the appropriate timer button:
    • 1 slice of turkey - Timer Button #7
    • 2 slices of turkey - Timer Button #8
  • When the timer sounds remove the deli liner and turkey slices or ham from the microwave

PREPARING SANDWICHES

    Prepared to order
  • Always wear single use gloves when preparing sandwiches
  • Place 2 pieces of Texas toast on the bun toaster chain
  • Pull down the foil wrap. Ensure the word Special on the foil wrap is facing away from you.
  • Place the toasted side of the toast down in the center of the foil wrap & build the sandwich on the non-toasted side of the toast
  • Turkey Slices may need to be “balanced” to ensure you can taste the turkey in every bite. If a turkey slice is small, put 2-3 slices on the sandwich
  • Heat turkey and ham
  • Using red tongs, place a slice of ham on the heel of the toast
  • Using red tongs, place a slice of turkey on the ham slice. If the turkey slice is smaller than a normal 2 oz. slice, place 2-3 slices of turkey on the sandwich.
  • Place a slice of American cheese on the turkey slice
  • Place ANOTHER slice of American cheese on top of the first slice of American cheese. (Turn the cheese so that it creates 8 points of cheese)
  • Place 4 half slices of bacon in a crisscross pattern on top of the American cheese
  • Apply condiments to the crown:  
  • Using a condiment spatula, apply 1 oz. of mayonnaise using a down and across motion
  • Pickles: Use fingers to place 4 pickles on sandwich. Do not overlap.
  • Shredded lettuce: Use fingers to place 1 oz. of lettuce on sandwich
  • Tomato: Use fingers to place 2 tomato slices on sandwich
  • Place dressed crown on top the bacon
  • Wrap in foil wrap following the “Square” wrapping procedures
  • Use a sharpie marker to mark the sandwich “CS” (Club Sandwich)

  • Using a squeeze bottle, apply 1 oz. of ranch to crown
  • Shredded lettuce: Use fingers to place 1 oz. of lettuce on sandwich
  • Tomato: Use fingers to place 2 tomato slices on sandwich
  • Place dressed crown on top the bacon
  • Wrap in foil wrap following the “Square” wrapping procedures
  • Use a sharpie marker to mark the sandwich “TR” (Turkey Ranch)

Serving

  • Dine-in: place the sandwich on the serving tray
  • Dine-out: place the sandwich into a 6 LB bag. Serve with one napkin.
