Q.A. Standard: All drinks should be prepared at the time order is placed. Never serve coffee past its hold time.

Tools Needed

  • Regular and decaf coffee pots
  • Regular and decaf air pots
  • Regular and decaf carafes

Health and Safety

  • Wash hands before starting to work and after handling anything that is not food related to prevent contamination and health hazards
  • Do not allow ice scoop handles to come in contact with ice
  • Do not handle drink cups around top of cup or lip area
  • Milk and orange juice must maintain a temperature of 34°F - 41°F
  • Handle hot coffee carefully! Always cap hot drinks before presenting to customer.
  • Cups should always be upside down for dispensing
  • Wash, rinse, and sanitize all utensils and surfaces that touch food every four hours or anytime they become contaminated

Receiving and Storing

  • Coffee is received and stored at room temperature (50°F – 70°F) in the dry storage area. Half & Half creamer is received and stored at 34°F - 41°F in the cooler.

Brewing

  • Ensure the coffee brewer is turned on
  • Remove and ensure round brew basket is clean
  • Use one coffee filter per brew
  • DO NOT PRE-PORTION COFFEE INTO FILTERS UNTIL READY TO BREW. THIS WILL AFFECT THE QUALITY OF THE COFFEE.
  • Tear open one pack of regular or decaf coffee and pour contents into the filter
  • Gently shake the coffee basket to level the coffee grounds
  • Place an empty, clean, glass coffee pot on the bottom warming plate
  • Push the brew button once. The coffee will begin brewing in a few seconds.
  • When brewing is complete, discard the filter and coffee grounds
  • Coffee will hold up to 30 minutes in the glass coffee pots
  • Place a QA tag beside the pot to indicate the discard time
  • Five minutes before a pot of coffee expires, brew another pot, when ready discard the old coffee

Coffee Rotation

  • During breakfast hours, it will be necessary to brew more than one pot of coffee
  • Always use the coffee from the pot that has the least amount of hold time remaining

Brewer

  • When the ON/OFF button is pressed, a light comes on and the display alternates between the date/time and “Ready to Brew”
  • When ready to brew a pot of coffee, place a glass coffee pot on the warming plate underneath the brewer and press “Brew”
  • If a FRONT/BACK button is pressed, it will turn the top front or top back warming plates on
  • Always ensure the warmer is on before placing a pot of coffee on the warmer

Air Pots

  • There is one air pot for regular coffee, and one air pot for decaf coffee
  • The air pots need to be pre-heated prior to the first use by pouring hot water in them
  • If you pour coffee into a cold air pot, the temperature of the coffee will drop off significantly
  • To fill or refill, press the two buttons on either side of the top to open
  • Remove the pump and pour coffee into air pot
  • An air pot will hold one pot of coffee
  • After filling, put pump back into air pot and close
  • Coffee can be held in an air pot for up to two hours
  • Place a dissolvable label with product name & discard time
  • Raise the handle to dispense coffee

Carafes

  • Carafes are only used by the hostess to refill a customer’s coffee in the dining room
  • A carafe will hold one pot of brewed coffee
  • Coffee in a carafe can be held for 30 minutes
  • To fill, unscrew the lid on top, remove and pour one pot of coffee into the carafe
  • Place the lid back on the carafe
  • Flip the switch on top to “STOP” when carrying, and to “ON” when pouring

Bulk Coffee

  • BULK COFFEE CONTAINERS ARE TO BE USED FOR SERVING COFFEE ONLY
  • BULK COFFEE CONTAINERS ARE ONE TIME USE ONLY (NO REFILLS)

Preparation and Assembly

  • Each bulk container will hold 1 ½ pots of coffee (approximately 96 oz. or 3 quarts)
  • Brew 2 pots of coffee
  • Assemble the bulk coffee container using the directions on the bulk container (6 steps)
  • Step 1: Push in sides to open box
  • Step 2: Fold flaps 1 & 2 together. Place tab 2 over 1.
  • Step 3: Push flap down over handle
  • Step 4: Push top flap over handle
  • Step 5: Slide front tabs behind last ring in spout
  • Step 6: Set on sturdy surface
  • Ensure the spout is facing upwards
  • Place saran wrap around the spout to help seal the bulk container lid
  • Place bulk container lid over saran wrap & fasten tightly
  • Sit bulk container back into its resting position

Coffee Packs and Filters

  • Decaf coffee is in an orange package
  • Keep coffee filters in a 2-quart Cambro container to prevent them from getting misshapen
  • Do not pre-portion coffee into filters before ready to brew, as this will affect the quality of the coffee

Serving (Drive-thru/Dine-in/Take-out)

  • Select proper size hot cup (12 ounce or 16 ounce)
  • Place the cup on the counter. Do not hold cup while pouring coffee.
  • Select pot of coffee/air pot (regular or decaf) with the least amount of hold time remaining
  • .Never serve coffee from a pot that has not completely finished brewing
  • Never mix (marry) two brewed pots of coffee together by pouring one partial pot into another
  • Fill cup to ½ inch from top of the cup
  • Put a lid on the cup of coffee and ensure the lid is seated firmly
  • Hand the cup of coffee to the customer or place on a tray

Close

  • Coffee (See Drink Maintenance for detailed information)
  • Turn off coffee brewer
  • Remove coffee basket and spray head
  • Clean the spray head with a damp cloth
  • Rinse off
  • Wipe down all sides
  • Replace spray head and coffee basket
  • Clean inside of any air pots with coffee cleaner. Rinse well. Allow to air dry.
