- Minimum quality serving temperature: 150°F to 160°F
- Q.A. Standard: Tortillas should be completely thawed before serving. Wraps should be soft and moist. There should be no dry or hard areas on the wrap.
Tools Needed
- Tortilla holder with lid
- Teaspoon
- Condiment spatula
- Yellow tongs
- Sharpie
- MPHC pans
- Slotted lid for MPHC
- 1/9 size pan
- Squeeze bottle
Work Safe
- Tortillas are stored at a temperature of 0°F +/- 10°F in the walk-in freezer
- Thawed Tortillas are stored at a temperature of 34°F to 41°F in the walk-in cooler for up to 2 days
- Never run the microwave oven empty. This may cause a fire.
Tortillas
Rotating and Thawing
- During opening, rotate ONLY the next day’s product from the walk-in freezer to the walk-in cooler
- Tortillas must thaw for 24 hours prior to use
- When tortillas are rotated from the walk-in freezer to the walk-in cooler, use a sharpie marker to mark the package with the following information:
- Pulled By Date/Time: Date & Time the product is removed from the walk-in freezer
- Ready By Date/Time: Exactly 24 hours from the pulled by date and time
- Use By Date/Time: Exactly 48 hours from the Ready by date

Holding
- Remove tortillas from the walk-in cooler 1 hour before use so that they can reach a holding temperature of 50°F – 70°F
- Before use, flex the room temperature package of tortillas. See photo below.
- Tortillas must be held away from any heat source in their original bag
- Place 1 bag of tortillas into a tortilla holder with lid
- Once the bag has been opened, be sure to seal the bag in-between uses to maintain product freshness
After Dinner
- After dinner, any sealed/unused, thawed product can be placed back into the walk-in cooler for the next day’s use, as long as the product has not exceeded the use-by date marked on the package.
Heating Tortillas
- Heat 1 tortilla on Button #1
- Heat 2 tortillas on Button #2
- Tenders can be held in the MPHC with a slotted lid. (HS2-no lid) No more than 12 per pan.
Preparing Chicken Wraps with Mayonnaise
- Place 1 tortilla in the microwave. Heat on Button #1.
- Pull down a paper wrap and lay on the make-up table with the word “Special”
- Place a 7” floured tortilla on the center of the paper wrap
- Use a condiment spatula to apply ¾ oz. mayonnaise diagonally on the top right corner of tortilla
- Use gloved fingers to portion ¾ oz. lettuce on mayonnaise.
- Use gloved fingers to add 1- ½ slice of tomato on the lettuce
- Use gloved fingers to break a slice of bacon in half. Lay the bacon slices overlapping on top of tomatoes.
- Use yellow tongs to place 1 chicken finger on top of bacon
Preparing Chicken Wraps with Honey Mustard
- Place 1 tortilla in the microwave. Heat on Button #1.
- Pull down a paper wrap and lay on the make-up table with the word “Special”
- Place a 7” floured tortilla on the center of the paper wrap
- Use a squeeze bottle to apply honey mustard – 10 lines
- Use gloved fingers to portion ¾ oz. lettuce on honey mustard.
- Use gloved fingers to add 1- ½ slice of tomato on the lettuce
- Use gloved fingers to break a slice of bacon in half. Lay the bacon slices overlapping on top of tomatoes.
- Use yellow tongs to place 1 chicken finger on top of bacon
Preparing Chicken Wraps with Ranch Sauce
- Place 1 tortilla in the microwave. Heat on Button #1.
- Pull down a paper wrap and lay on the make-up table with the word “Special”
- Place a 7” floured tortilla on the center of the paper wrap
- Use a squeeze bottle to apply ¾ oz. Ranch diagonally on the top right corner of tortilla – 10 lines
- Use gloved fingers to portion ¾ oz. lettuce on ranch.
- Use gloved fingers to add 1- ½ slice of tomato on the lettuce.
- Use gloved fingers to break a slice of bacon in half. Lay the bacon slices overlapping on top of tomatoes.
- Use yellow tongs to place 1 chicken finger on top of bacon
Folding Chicken Wraps - Use Paper Wrap
- With the product running diagonally, fold bottom left corner of tortilla about 1/3 of the way up until it touches the mixture (See step 1.)
- Fold the bottom right of the tortilla to center (See step 2.)
- Fold the top left of tortilla over, overlapping the folded left side (See step 3)
Wrapping Chicken Wraps - Use Paper Wraps
1. With the product diagonal (corner to corner) on center of wrap, fold the bottom left corner of the paper wrap about halfway up until it touches the tortilla
2. Fold the top right corner of the paper wrap over until it touches the tortilla
3. Fold the bottom right corner of the paper wrap up until it touches the bottom of the tortilla
4. Roll up twice from bottom right corner to top left corner
5. Use a sharpie to mark the wrap

- “HM” for Honey Mustard wraps
- “R” for Ranch wraps
