Recipe

Sausage, Egg & Cheese Wrap

  • 1 7” floured tortilla
  • 1 slice American cheese
  • ¼ piece of sausage
  • 2 ounces scrambled eggs

Bacon, Egg & Cheese Wrap

  • 1 7” floured tortilla
  • 1 slice American cheese
  • 1 whole strip bacon
  • 2 ounces scrambled eggs

Minimum quality serving temperature

  • 150°F to 160°F

☆ Q.A. Standard: Tortillas should be completely thawed before serving. Wraps should be soft and moist. There should be no dry or hard areas on the wrap.

Tools Needed

  • Yellow-handled solid egg spatula
  • Two 2-ounce spoodles
  • Tortilla holder with lid
  • Warming pan for MPHC
  • Solid lid for warming pan
  • Sharpie
  • Cutting board
  • Biscuit splitter

Work Safe

  • Wash hands before starting to work and after handling anything that is not food related to prevent contamination and health hazards
  • Always wear single use gloves when preparing or handling ready to eat food. There should be no bare hand contact with ready to eat food
  • Tortillas are stored at a temperature of 0°F +/- 10°F in the walk-infreezer
  • Thawed Tortillas are stored at a temperature of 34°F to 41°F in the walk-in cooler for up to 2 days
  • Never run the microwave oven empty. This may cause a fire
  • Wash, rinse, and sanitize all utensils and surfaces that touch food every four hours or anytime they become contaminated

Receiving and Storing

  • Picante sauce is delivered and stored at room temperature (50°F to 70°F) in the dry storage area
  • Sausage is delivered and stored at 0°F +/- 10°F
  • Liquid eggs and cheese are delivered and stored at 34°F - 41°F
  • Bacon is delivered frozen and stored at a temperature of 34°F - 41°F
  • Tortillas are delivered and stored at 0°F +/- 10°F
  • Cases of flour tortillas should always be stored flat. Never store cases on their side

Rotating and Thawing

Tortillas

  • During opening, rotate ONLY the next day’s product from the walk-in freezer to the walk-in cooler
  • Tortillas must thaw for 24 hours prior to use
  • When tortillas are rotated from the walk-in freezer to the walk-in cooler, use a sharpie marker to mark the package with the following information:
    • Pulled By Date/Time: Date & Time the product is removed from the walk-in freezer
    • Ready By Date/Time: Exactly 24 hours from the pulled by date and time
    • Use By Date/Time: End of Breakfast, the day following the Ready by date
  • Example:
    • Pulled by date/time: 7-22-20    4:00 A.M.
    • Ready by date/time: 7-23-20    4:00 A.M.
    • Use by date/time:     7-24-20    End of Breakfast

Holding

  • Remove tortillas from the walk-in cooler 1 hour before use so that they can reach a holding temperature of 50°F – 70°F
  • Before use, flex the room temperature package of tortillas. See photo below.
  • Tortillas must be held away from any heat source in their original bag
  • Place 1 bag of tortillas into a tortilla holder with lid
  • Once the bag has been opened, be sure to seal the bag in-between uses to maintain product freshness

After Breakfast

  • After breakfast, any sealed/unused, thawed product can be placed back into the walk-in cooler for the next day’s use, as long as the product has not exceeded the use-by date marked on the package

Preparing Sausage, Egg and Cheese Breakfast Wrap - Make Ahead

  • Pull down a foil wrap and lay upside down on the make-up table with the word “Special” at the top
  • Bring down the cutting board and biscuit splitter. Use red tongs to place 1 sausage patty on the cutting board
  • Use the biscuit splitter to cut the sausage patty into quarters (4 even size pieces)
  • Place a 7” floured tortilla on the center of the foil wrap
  • Break one slice of American cheese in half and place end to end diagonally on the top right corner of tortilla
  • Use gloved fingers to break a quarter piece of sausage into 6 pieces. Distribute evenly over top of cheese slice
  • Use a 2-ounce spoodle to portion 2 ounces of scrambled eggs on top of the sausage

Preparing Bacon, Egg and Cheese Breakfast Wrap - Make Ahead

  • Pull down a foil wrap and lay upside down on the make-up table with the word “Bacon” at the top
  • Place a 7” floured tortilla on the center of the foil wrap
  • Break one slice of American cheese in half and place end to end diagonally on the top right corner of tortilla
  • Place one whole strip of bacon on top of the cheese
  • Use a 2-ounce spoodle to portion 2 ounces of scrambled eggs on top of the bacon

Wrapping Breakfast Wraps - Use Foil Wrap

  • With the product running diagonally, fold bottom left corner of tortilla about 1/3 of the way up until it touches the mixture
  • Fold the bottom right of the tortilla to center
  • Fold the top left of tortilla over, overlapping the folded left side
  • Ensure the word “Special” is facing away from you. With the product diagonal (corner to corner) on center of wrap, fold the bottom left corner of the paper wrap about halfway up until it touches the tortilla
  • Fold the top right corner of the paper wrap over until it touches the tortilla
  • Fold the bottom right corner of the paper wrap up until it touches the bottom of the tortilla
  • Roll up twice from bottom right corner to top left corner
  • Use a sharpie to mark the wrap “S” for sausage wraps or “B” for bacon wraps

Holding

  • Prepared breakfast wraps can be held in the MPHC for 6 hours as long as the meat temperature holds to at least 150°F. Wraps can be held from open to 10 am.
  • No more than 6 wraps should be placed in the MPHC at one time
  • When making new wraps to hold, place the newly made wraps in bottom of pan and rotate older ones to the tops to use first
  • Any prepared breakfast wraps remaining at 10 am must be discarded into the waste container
  • During changeover, breakfast wraps are prepared to order

Preparing to Order

  • Place 1 tortilla in the microwave. Heat on Button #1. Remove and place on foil wrap.
  • Pull down foil wrap with the word “Special” facing away from you
  • Break one slice of American cheese in half and place end to end diagonally on the top right corner of tortilla
  • Place one whole strip of bacon or ¼ piece of sausage broken up on top of the cheese
  • Use a 2-ounce spoodle to portion 2 ounces of scrambled eggs on top of the bacon
  • Fold & wrap the wrap using the folding & wrapping procedures
