Tools Needed
- Fry basket
- MPHC pan
- Fry skimmer
- Slotted lid for MPHC
- Brown tongs
- Red tongs
Preparing & Holding Onion Blossoms
- Onion blossoms are cooked from a frozen state in the 350°F fryer for 2 minutes 45 seconds
- Carefully pour onion blossoms into the basket
- Do not fill the basket with more than ½ of a bag of onions
- Close bag tightly and put back in the freezer
- Slowly lower basket into the hot shortening
- Do not drop another basket into the same fryer within 30 seconds
- Press timer button that is set for 2 minutes 45 seconds
- When the shake timer sounds after 1 minute, gently shake basket
- When the final timer sounds, press the button
- Lift fry basket from shortening, allow excess shortening to drain for 5 seconds
- Transfer onion blossoms into a clean MPHC pan
- Ensure that the pan passes under the “Bump” on the lid
- Onion blossoms can be held for 30 minutes in the MPHC with slotted lid
- Any onion blossoms remaining after the hold time has expired, discard into the waste container
- Never serve expired product
Serving
Onion Blossoms (Snack)
- Place fry cartons in a 1/6 pan. Place pan on makeup table.
- Using brown tongs, fill a regular fry carton with Onion blossoms
- Dine in – Place on a lined tray. Serve with 1 soufflé cup of requested dipping sauce.
- Dine out – Place in a 6 lb. bag. Serve with 1 napkin and 1 soufflé cup of requested dipping sauce.

Onion Blossom Bacon Burger
- All burgers are prepared to order
- Always wear single use gloves when preparing burgers
- When a sandwich is ordered, place a bun cut side up on the bun toaster chain
- Pull down the foil wrap with the word “Special” facing away from you
- Use brown tongs to portion 8 onion blossoms on the heel
- Using red tongs, place two meat patties on onions
- Place one slice of American cheese on top of the meat patties
- Place 4 half slices of bacon on cheese in crisscross pattern
- Place the heel, onions, meat, cheese and bacon in the microwave
- Press the appropriate timer button:
- 1 sandwich – Timer Button #1
- 2 sandwiches – Timer Button #2
- Bring the crown down from the toaster
- Apply 1 oz. BBQ sauce using squeeze bottle (approximately 4 circles)
- Place 4 pickles on sandwich. Do not overlap
- Portion ½ oz. shredded lettuce on sandwich
- Place 1 tomato slice on sandwich
- When the timer sounds, remove the heel, meat, cheese and bacon from the microwave
- Place dressed crown on top of meat
- Wrap in foil wrap following the “Square” wrapping procedures
- Use a sharpie marker to mark the sandwich “BB”
