Health & Safety
Preparing
- Take the number of spicy chicken fillets to be cooked from the freezer
- Load into a fillet basket
- Slide a pie box over the handle of the fillet basket to avoid confusion with regular chicken fillets. The spicy fillets should also be distinguishable by the red color.
- Never cook regular chicken fillets and spicy chicken fillets in the same basket, at the same time.
- Place no more than 7 spicy chicken fillets in the fillet basket to prevent them from sticking together.
- Slowly lower the basket into the hot shortening.
- Press the 6-minute chicken fillet timer.
- Do not drop another basket or rack into the same fryer within 30 seconds.
- Wash your hands.
- When the timer goes off, press the button.
- Lift the rack from the shortening and allow excess shortening to drain for 5 seconds.
- Always handle cooked spicy chicken fillets with yellow tongs.
Holding
- Bring the appropriate warming pan to the fryer to prevent shortening from dripping onto the floor when transferring spicy chicken fillets from the fryer to the product holding cabinet
- Spicy chicken fillet can be held in the breakfast LTO drawer of the product holding cabinet for up to 60 minutes.
- Hold no more than eight spicy chicken fillets in one warming pan
- Use a slotted lid for spicy chicken fillets
- Ensure that the pan passes under the “Bump” on the lid
- When the holding time has expired, empty the contents of the pan into the waste container
- Empty warming pans or pans with expired product should never be in the holding cabinet
Assembly
- Place biscuit on biscuit pan or cutting board
- Use biscuit splitter to split biscuit in half
- Use yellow tongs to place the spicy fillet on the heel of the biscuit
- Wrap the sandwich in the sausage wrap, with the word “Special” showing, using the corner to corner wrapping procedures
- Mark the letter “S” on the wrap using a sharpie marker.
