Tools Needed

  • Deli liner
  • Biscuit pan
  • Sharpie
  • 13 1/2" rubber spatula
  • Pan liner
  • Over thermometer
  • 1/2 size pan with grate

Health and Safety

  • Wash hands before starting work and after handling anything not food related
  • Gloves - If leaving work station or changing tasks, wash hands and change gloves

Cooking

  • Program #5 on the biscuit timer for 11 minutes
  • Chocolate chunk cookies should be cooked during snack time (Do not cook during breakfast or lunch unless necessary)
  • Only use the bottom oven when baking chocolate chunk cookies
  • Adjust the oven temperature to 325°F with the fan on LOW setting.
  • Ensure the thermometer reads 325°F before putting cookies in the oven to bake.                                    
  • Place a pan liner on a biscuit pan
  • Place up to 8 chocolate chunk cookies on the pan liner. Ensure they are evenly spaced with 2 rows of 3 on sides and 2 cookies in the center- see photo
  • Ensure the FLAT side of the cookie is laid down on the liner

  • Biscuit ovens should have three racks
  • If only one pan is loaded, place it on the center rack. If loading two pans, place one on the top rack and one on the bottom
  • Check oven temperature. When the red light goes out on the oven, check the thermometer. The temperature should be 325°.
  • Do not load chocolate chunk cookies in the oven unless the red light is out, and oven is up to the correct temperature
  • When the oven is at the correct temperature, open door, and load
  • Press the 11-minute timer
  • When the timer sounds, remove the chocolate chunk cookies from the oven
  • Place the pan on the biscuit rack to cool for 30 minutes
  • DO NOT ATTEMPT TO REMOVE THE CHOCOLOTE CHUNK COOKIES FROM THE PAN BEFORE THE 30 MINUTE COOL TIME IS UP. THEY WILL CRUMBLE.
  • Once the 30-minute cool time is complete, use a white 13 ½” spatula to lift the chocolate chunk cookie from the liner by gently sliding under the chocolate chunk cookie
  • Slide the chocolate chunk cookie onto the center of a deli liner
  • Wrap the deli liner using square wrapping procedures
  • Chocolate chunk cookies will hold 2 days including date prepared
  • Using a sharpie, write the 2-day expiration date (NUMBER ONLY) ON THE BOTTOM LEFT CORNER of the liner
  • EXAMPLE:  Day prepared + 1 additional day = Discard Date
  • Prepared on 29th + 30th = Discard on the 30th (EOD)
  • Place the prepared chocolate chunk cookies in a ½ size 2” deep pan with wire grate
  • Place the ½ size 2” deep pan with wire grate on top of the microwave on backline

Reheating

  • When a chocolate chunk cookie is ordered, place the bag with the cookie inside the bag into the microwave and press the appropriate timer button:
    • One cookie – Timer Button #1
    • Three cookies – Timer Button #3
  • When timer sounds, remove from microwave and pass to frontline
  • Any chocolate chunk cookies remaining at End of Day of expiration date must be discarded

Serving

  • For dine-in place the container on the serving tray
  • For dine-out place the container into a 6 LB bag. Serve with one napkin.

Cookies (By the Half-Dozen)

  • Heat 3 cookies at a time in the microwave
  • Always leave cookies in their cookie bags
  • Place 6 chocolate chunk cookies into a 9-inch box. Stand the cookies up next to each other running logo side to logo side of the box.
  • Close the 9-inch box
  • Place the 9-inch box into a T-shirt bag
  • Serve with 6 napkins
