QA Standard

Texas Toast should be evenly toasted and golden brown. Sandwich should be neatly assembled.

Tools Needed

  • 2- 7 ¾” condiment spatulas
  • Yellow tongs
  • Fryer basket
  • Sharpie
  • MPHC pans with grate
  • 1/6 size 4” deep pans

Work Safe

To cut a sandwich in half when requested, place biscuit splitter on top of sandwich and place free hand on top of the blade to hold the toast. Do not hold toast from side while cutting.

Fried Green Tomatoes

  • Program timer #5 on both panels for 5 ½ minutes seconds on Vat #1. Program a 1-minute shake time.
  • When programming name the product “FGT”
  • Name the cook ID “FT”

Preparing and Holding - MPHC

  • COMMUNICATE WITH BACKLINE COORDINATOR FOR AMOUNT OF PRODUCT TO COOK
  • Cooked fried green tomatoes are held in the MPHC using a warming pan with a grate in the bottom.
  • Use a slotted lid for fried green tomatoes. HS2 units no lid.
  • Using two Food-Mitt gloves, take the amount of fried green tomatoes to be cooked from the freezer
  • Cook no more than 12 fried green tomatoes at one time in the fryer basket. Overfilling will cause fried green tomatoes not to cook properly.
  • Remove the Food-Mitt gloves by shaking them off your hands into a garbage can. Ensure you do not touch the gloves.
  • Gently lower the fryer basket into the fryer set to 350°F
  • Press the timer button for 5 ½ -minutes
  • Shake fried green tomatoes after 1 minute of cooking
  • When the final timer sounds, raise the fryer basket out of shortening and allow to drain for 5 seconds
  • Always use yellow tongs to handle cooked fried green tomatoes
  • Place no more than 12 fried green tomatoes in the warming pan with grate
  • Ensure that the pan passes under the “Bump” on the lid to lock the pan in place
  • Press the timer button to begin the 30-minute hold timer
  • Any fried green tomatoes remaining 30 minutes after cooking must be discarded into the waste
  • Always store the fryer baskets on the fryer bracket when not in use

Fried Green Tomato B.L.T.

 
  • Prepared to order
  • Always wear single use gloves when preparing sandwiches
  • When a sandwich is ordered, place 2 slices of Texas toast on the bun toaster chain
  • Pull down the foil wrap. Ensure the word “Special” is facing away from you.
  • Once toasted, remove 1 slice of Texas toast from the toaster
  • Place the toasted side of the toast down in the center of the foil wrap & build the sandwich on the non-toasted side of the toast
  • Place 4 whole slices of bacon on the heel of the toast.
  • Remove the 2nd slice of Texas toast from the toaster and carry the toast to each condiment as you are dressing sandwich.
  • Ranch Sauce: Use a squeeze bottle to portion 1 oz. of ranch sauce on the crown (5 circles)
  • Shredded lettuce: Use fingers to place 1/2 oz of shredded lettuce on the sandwich
  • Fried Green Tomato: Use yellow tongs to place 2 fried green tomato slices on the lettuce
  • Place the dressed crown on top of the bacon
  • Wrap following the “Square” wrapping procedures
  • Use a sharpie marker to mark the sandwich FG BLT

  • Always wear single use gloves when preparing sandwiches
  • When a sandwich is ordered, place a bun cut side up on the bun toaster chain
  • Pull down the foil wrap. Ensure the word “Special” is facing away from you.
  • Once toasted, remove the heel
  • Use red tongs to place 2 meat patties on heel
  • Place 4 half slices of bacon on top of meat
  • Place the heel, meat, and bacon in the microwave

Dress Crown:

  • Ranch Sauce: Use a squeeze bottle to portion 1 oz. of ranch sauce on the crown (5 circles)
  • Shredded lettuce: Use fingers to place 1/2 oz of shredded lettuce on the sandwich
  • Fried Green Tomato: Use yellow tongs to place 2 fried green tomato slices on the lettuce
  • Place the dressed crown on top of the bacon
  • Wrap following the “Square” wrapping procedures
  • Use a sharpie marker to mark the sandwich “SB”

Fried Green Tomato Snack

  • Place three fried green tomatoes into one end of a lined food tray using yellow tongs
  • Empty a regular size order of fries in the opposite side of the food tray
  • Using yellow tongs, place 3 fried green tomatoes into a lined 3 lb. food tray. Portion a regular of fries in the tray.
  • Dine In- Place on a lined serving tray. Serve with 1 soufflé cup of ranch dressing.
  • Dine Out- Place in 6-pound bag with 2 napkins and 1 soufflé cup of ranch dressing
