Q.A. Standard: All drinks should be prepared at the time order is placed. Never serve lemonade past the hold time.
Tools Needed
- Ice Scoop
- 14 x 18 black fiberglass tray
- 4 x 4 waffle drip tray
- Sharpie
- Dissolvable label
Health and Safety
- Do not handle drink cups around top of cup or lip area
- Cups should always be upside down for dispensing
Preparing and Holding
- Open the foil bag inside the lemonade box
- Remove 1 pouch of lemonade/sugar mix
- Zip close the foil bag
- Remove brew basket
- Place one lemonade/sugar bag onto center of grate in brew basket
- Place brew basket back into brewer
- Slide the lemonade urn into position underneath the brew basket
- Position the lemonade urn correctly underneath the brew basket or water will spill over during the brewing cycle
- Ensure the machine is on. A yellow light will indicate the power is on. If not, press the ON/OFF button once.
- Press button “C” once. The lemonade will start brewing in a few seconds.
- When brewing is complete, cover the lemonade urn with a solid lid
- Use a sharpie to write Lemonade and the 2 day hold time on a dissolvable label
- EXAMPLE: Day prepared + 1 additional day = Discard Date
- Prepared on 17th + 18th = Discard on the 18th (EOD)
- Place the dissolvable label on the back of the lemonade urn
- Move the urn to the lobby or drive thru. Place on a 14x18 black fiberglass tray. Place a waffled drip tray under the dispensing spout.
- Discard the lemonade/sugar bag
- Rinse brew basket
- Place brew basket back into place on the brewer
Serving (Drive-Thru/Dine-In/Take-Out
- Select proper size cup
- Use ice scoop to fill the cup full of ice
- Place cup under lemonade urn spout. Depress lever to fill cup.
- Fill to 1/4 inch from top
- Place a lid on the cup and ensure it is sealed completely. Mark the lid “L” for lemonade
- Hand prepared drinks(s) to customer with a straw
Bulk Lemonade
- BULK LEMONADE CONTAINERS ARE ONE TIME USE ONLY (NO REFILLS)
Assembly & Serving
- Remove lid from the ½ gallon container
- Fill the ½ gallon container to the .ll line with lemonade
- Tighten the lid onto the ½ gallon container until it clicks
- Using a sharpie put a check mark in the “Other” bubble
- Using a sharpie write the current date and time on the line labeled .ll date & time
- Hand to the customer
Breaking The Bacteria Cycle - Close
- Empty remaining contents of lemonade urn into a 1-gallon pitcher(s)
- Transfer the dissolvable label that has the hold time from the lemonade urn to the 1-gallon pitcher(s)
- Place the 1-gallon pitcher(s) in the reach-in cooler in drive-thru. If more than one 1-gallon pitchers, each one will need a dissolvable label with name & discard date.
- Once lemonade has been poured into 1-gallon pitcher(s), it should never be poured back into the urn.
- Lemonade urns and ice scoops must be washed, rinsed, sanitized and air dried every night
- Remove lemonade urn spout and disassemble parts so they may be washed, rinsed, and sanitized
- After washing, rinsing, and sanitizing, reassemble spout on lemonade urn. Leave spout in open position. Allow to air dry.
- Serve any remaining lemonade from the night before first directly from the 1-gallon pitcher(s) in the drive through
- Brew fresh lemonade for the dining room every morning
