  • 2 Quart cambro
  • Dissolvable label

Health and Safety

Wash hands before starting work

and after handling anything not food-related

Wear gloves. If leaving workstation or

changing tasks, wash hands and change gloves.

Wash, rinse and sanitize all utensils

and surfaces every 4 hours.

Panning and baking Biscuit Bites

  • Adjust the oven temperature to 325°F with the fan on LOW setting.
  • Ensure the thermometer reads 325°F before putting cookies in the oven to bake. Biscuit Bites are cooked from a frozen state
  • Using a gloved hand break the biscuit bites apart
  • Place the biscuit bites ½” apart on a lined biscuit pan. Up to 40 per pan. 8 rows of 5.
  • When placing the biscuit bites on the pan ensure you place the flat bottom side down
  • Biscuit bites that are cooked upside down will not rise or cook properly
  • Oven temp 325°F with the fan on LOW. When the red light goes out, place pan in oven.
  • Place pan toward the rear of the oven
  • Set 7-minute timer
  • Do not open oven doors while biscuit bites are cooking
  • When timer sounds, look through the glass door and make sure biscuit bites are proper color
  • Once baking is complete, ice immediately

Icing Biscuit Bites

  • Cut corner of icing bag
  • Squeeze ¼ oz. icing on top of the biscuit bite
  • Allow the icing to melt on the biscuit bite. DO NOT spread the icing around
  • Any remaining icing in the bag, place in a covered Cambro
  • Use a sharpie to mark a dissolvable label with a 2-day hold. Day opened plus 1 additional day.

Serving Biscuit Bites

  • Allow to cool for 30 minutes on the biscuit rack
  • After the pan of biscuit bites have cooled, wrap the pan loosely with plastic wrap
  • Place pan onto the biscuit rack
  • When an order is placed, use yellow tongs to place 6 biscuit bites from the wrapped pan into a lined 3 lb. food tray
  • Microwave on button #1
  • When the timer sounds, remove and send to Frontline for serving
  • Any biscuit bites remaining at End of Day must be discarded

Serving

  • Dine-in: Place on lined serving tray
  • Dine-out: Slide into 6 lb. bag with logo up. Serve with a fork and 2 napkins.
