WORKSAFE
Always wear Food-Mitt gloves when handling raw meat
PREPPING & HOLDING
Bologna can be held in a 1/3 size 6” deep pan with lid for 7 days.
Place lid on pan. Place dissolvable label on lid to mark product name, date prepped and discard date. Store in cooler.
PREPARING & HOLDING
- Always use two Food-Mitt gloves when handling raw meat
- Place bologna on the grill
- Four pieces of bologna will fit under the grill weight at one time
- Remove the Food-Mitt gloves by shaking them off your hands into a garbage can. Ensure you do not touch the gloves.
- Place the grill weight on the bologna
- Press the 3-minute cook timer
- When duty timer (turn) sounds after 1 1/2 minutes, remove the grill weight
- Use the red perforated meat spatula to turn the bologna over
- Place the grill weight back on the bologna
- When the final timer sounds, remove the grill weight
- Remove the bologna from grill and place in a warming pan
- Up to ten slices of cooked bologna can be held in one warming pan
- Use a solid lid on the warming pan for bologna
- Cooked bologna may be held for up to 30 minutes in the product holding cabinet
- Any bologna remaining after the 30-minute hold time must be discarded into the waste container
- Scrape grill of bologna residue
SERVING
Bologna Biscuit
- Pull a special biscuit wrap and place on the sandwich board
- Split a biscuit in half using a biscuit splitter
- Place the heel of the biscuit on the center wrap
- Using red tongs, place one slice of bologna on the heel
- Place the crown of the biscuit on top of the bologna
- Wrap the biscuit using the corner-to-corner sandwich wrapping procedures
- Mark wrapper with “B” for bologna
- Bologna biscuits may be held for up to 20 minutes in the sandwich holding bin (LTO slot)
Side Order
Dine in – Place 2 slices of bologna on a lined 3 lb. food tray and place on service tray with fork
Dine out – Place 2 slices of bologna on a lined 3 lb. food tray. Place in a 6 lb. bag with the logo facing up. Serve with a fork and 2 napkins.
