Tools
- Brix cup
- Syrup separator
- Thermometer
- Screwdriver
- Cleaning brush
Worksafe
- Wash hands before starting work and after handling anything not food related.
- Wash, rinse, sanitize all utensils and surfaces every 4 hours.
- Always disconnect power supply before removing covers from equipment
Brixing Drink System
Brixing the drink system should be done by the Area Supervisor- Ensure you are using the correct brix cup
- Remove the nozzle from drink valve head
- Remove the diffuser from drink valve head
- Attach the syrup separator to the drink head
- Center the brix cup under the separator so that the carbonated water is dispensed into the center cup, and the syrup is dispensed into the small cup
- Depress the drink lever until the center cup is filled to the “ratio line” with carbonated water
Adjusting Ratio For Drink System
Adjusting the ratio for the drink system should be done by the Area Supervisor- Lift the cover of the valve head to expose the syrup and carbonated water adjustment screws
- The syrup adjustment screw will always be on the right
- The carbonated water adjustment screw will always be on the left
- Turn the adjustment screw clockwise to increase the amount of syrup or carbonated water
- Continue to adjust the levels of the syrup and carbonated water until the levels are exact in the brix cup
- Clean the diffuser and push it back into place
- Twist the nozzle back into place
- Close the cover on the valve head
Cleaning The Drink System
- Remove nozzles and diffusers
- In the 3-compartment sink wash, rinse, and sanitize nozzles and diffusers
- Place the nozzles and diffusers on a clean sanitized serving tray
- Place the serving tray on the front counter to air dry overnight
- Dayshift opener will put the nozzles and diffusers back onto drink systems
- Wipe down valves activating levers, towers and heads
- Use a stiff brush to clean the underside of the valve head where the diffuser and nozzle attach
