Portioning

Regular Order Kids Order
3 pancakes with ½ oz. margarine 1 pancake with ¼ oz. margarine

☆ Q.A. Standard: Pancakes should be golden brown, with no gray coloring and no hard edges

  • 1/3 size, 4-inch-deep pan

If leaving work station or changing tasks, wash hands and change gloves Minimum All Cooked Foods Every 4 Hours
  • Never run the microwave oven empty
    • This may cause a fire

Preparing

  • Pancakes are prepared from a thawed state
  • Pancakes can be held in the reach-in cooler, or one package can be stored in a 1/3 size, 4-inch-deep pan on the make-up table
  • 1/3 size pan- Place a deli liner between each set of 3 pancakes- Use this liner to place the pancakes in the microwave
  • Pancakes are cooked to order

Regular Order (3 Pancakes)

  • When pancakes are ordered, place the deli liner and 3 pancakes into the microwave
  • Spread the pancakes out, so they overlap each other
  • Never stack pancakes directly on top of one another
  • Close the microwave oven door. Never slam the door!
  • Press the timer button (0)
  • When the timer sounds, open the door and remove the deli liner with pancakes
  • Flip the pancakes from the deli liner into the 9-inch plate (dine-in) or plain hinged container (dine-out). Discard deli liner.
  • Using the squeeze bottle, apply ½ ounce of liquid margarine evenly over the three pancakes
  • Close the microwave door

Kid’s Order (1 Pancake)

  • When a kid’s order (1 pancake) is ordered, place a deli liner in the microwave
  • Place 1 pancake on the center of the deli liner
  • Close the microwave oven door. Never slam the door!
  • Press the timer button (5)
  • When the timer sounds, open the door and remove the deli liner and pancake
  • Flip the pancake from the deli liner into the 9-inch plate (dine-in) or plain hinged container (dine-out). Discard the deli liner.
  • Using the squeeze bottle, apply ¼ ounce of liquid margarine evenly over the pancake
  • Close the microwave door

Serving

  • During breakfast, hold syrup packs in a shallow 2” or 4” pan
  • Place the pan in the holding bin or heated display
    • This will allow syrup to be served warm

Regular Order

  • Dine in - Place plate on a serving tray
    • Place a fork and two syrup packets beside the plate on the serving tray
  • Dine Out - Place the hinged container in a plastic carryout bag. Place 2 syrup packets, 1 napkin, and a fork into a 6 lb. bag
    • Place the bag into the plastic carryout bag

Kid’s Order

  • Dine in - Place plate on a serving tray
    • Place a fork and two syrup packets beside the plate on the serving tray
  • Dine Out - Place the hinged container in a plastic carryout bag. Place 1 syrup packets, 1 napkin, and a fork into a 6 lb. bag
    • Place the bag into the plastic carryout bag

Close of Breakfast

  • Serve all customers
  • Clean the inside of the microwave with a clean soapy towel
  • Wash, rinse, and sanitize the squeeze bottle and allow it to air dry
  • Clean the workstation area with a sanitized towel
  • Place lid on 1/3 size pan with pancakes remaining at end of breakfast
    • Label “USE FIRST” and place it in the walk-in cooler
  • Sweep and mop the workstation area
