Tools Needed
- 2 gallon plastic container with lid
- Wire whisk
- 64-ounce measuring cup
- Three 1-gallon pitchers with lids
- Flavoring bottle rack
- 4 to 6 - Flavoring bottle pumps
Health and Safety
- Wash hands before starting to work and after handling anything that is not food related to prevent contamination and health hazards
- Never handle cups around the top or lip of the cup
- Always wear single-use gloves when preparing or handling ready to eat food
- Wash, rinse, and sanitize all utensils and surfaces that touch food every four hours or anytime they become contaminated
Receiving and Storing
- Coffee, sugar, and flavoring syrups are delivered and stored at room temperature (50°F-70°F)
- Milk and light cream are delivered and stored at 34°F - 41°F

Preparing Flavoring Syrup Pumps
- Twist the pump until the top is all the way up
- Place the tube inside the syrup
- Before twisting the pump onto the syrup bottle, slowly push down on the pump approximately three times
- This will pull some of the syrup into the pump so it does not spill over when twisted onto the syrup bottle
Preparing and Holding Coffee/Sugar Mixture
- Measure 32 ounces (4 cups) of sugar and pour into a 2-gallon plastic container
- When the hold time for brewed regular coffee has expired, pour any remaining coffee into the plastic container with the sugar
- DO NOT USE DECAF COFFEE IN THE COFFEE/SUGAR MIXTURE
- Using a wire whisk, stir the coffee/sugar mixture. Stir each time more coffee is added to ensure the sugar is dissolved
- Once the container contains 2 gallons of coffee, cover with a plastic lid and write the discard date on the lid
- The coffee/sugar mixture can be held for up to 4 days
- Place the covered container in the cooler until it reaches a temperature of 34°F - 41°F
Preparing and Holding Iced Coffee Mix
- Once the coffee/sugar mixture has cooled to the appropriate temperature, the iced coffee mix can be prepared
- Measure 64 ounces (1/2 gallon) of the cooled coffee/sugar mixture and pour into a 1-gallon pitcher
- Measure 24 ounces of milk from the milk dispenser. Pour into the pitcher with the coffee/sugar mixture
- Measure 12 ounces of light cream and add to the 1-gallon pitcher
- DO NOT ADD HOT COFFEE TO THE ICED COFFEE MIX, AS THIS WILL CAUSE THE MILK CREAM TO CURDLE
- Use a wire whisk to thoroughly stir the iced coffee mix. Stir for at least 45 seconds
- Write the 2 day discard date on the top of the pitcher
- Cover and place in the walk-in cooler or in the reach-in cooler on the frontline
- Any iced coffee mix remaining at close on the discard date must be discarded
Serving
Regular Size:
- Fill a 20 ounce cup 2/3 full of ice
- If the customer requests flavoring (Mocha, Vanilla, or Caramel) portion one pump of the customer’s flavor choice into the cup over the ice
- THE CUSTOMER MAY RECEIVE ONE ADDITIONAL PUMP OF FLAVORING AT NO ADDITIONAL CHARGE MORE THAN TWO PUMPS WILL REQUIRE AN ADDITIONAL CHARGE
- Pour the iced coffee mix over the ice and flavoring until it reaches ½ inch from the top of the cup (Approximately 10 ounces)
- Place a lid on the cup Make sure the lid is seated firmly
- If the iced coffee is original without any flavoring, you do not have to mark the lid
- If the customer has requested a flavor be added to their iced coffee, ensure the lid is marked with the correct flavor (See Drink Marking chart below)
- Hand to customer with a regular straw or place in a cup carrier
Large Size:
- Fill a 32 ounce cup 2/3 full of ice
- If the customer requests flavoring (Mocha, Vanilla, or Caramel) portion two pumps of the customer’s flavor choice into the cup over the ice
- THE CUSTOMER MAY RECEIVE ONE ADDITIONAL PUMP OF FLAVORING AT NO ADDITIONAL CHARGE MORE THAN THREE PUMPS WILL REQUIRE AN ADDITIONAL CHARGE
- Pour the iced coffee mix over the ice and flavoring until it reaches ½ inch from the top of the cup (Approximately 22 ounces)
- Place a large lid on the cup Make sure the lid is seated firmly
- If the iced coffee is original without any flavoring, you do not have to mark the lid
- If the customer has requested a flavor be added to their iced coffee, ensure the lid is marked with the correct flavor (See Drink Marking chart below)
- Hand to customer with a regular straw or place in a cup carrier
ICED COFFEE (half gallon)
Assembly & Serving
- Remove lid from the ½ gallon container
- If the customer requests flavoring (Mocha, Vanilla, or Caramel) portion six pumps of the customer’s flavor choice directly into the ½ gallon container
- Pour the iced coffee mix into the ½ gallon container
- Fill the ½ gallon container to the fill line with iced coffee
- Tighten the lid onto the ½ gallon container until it clicks
- Using a sharpie put a check mark in the Other bubble on the ½ gallon container
- Using a sharpie write the current date and time on the line labeled fill date & time
- “Swirl” the ½ gallon container for 5 seconds to blend the flavoring & iced coffee mix thoroughly
- Hand to the customer
BREAKING THE BACTERIA CYCLE -- CLOSE
- Empty remaining contents of beverage dispenser into a 1-gallon pitcher(s)
- Transfer the dissolvable label that has the hold time from the beverage dispenser to the 1-gallon pitcher(s)
- Place the 1-gallon pitcher(s) in the reach-in cooler in drive-thru. If more than one 1-gallon pitchers, each one will need a dissolvable label with name & discard date.
- Once iced coffee has been poured into 1-gallon pitcher(s), it should never be poured back into the beverage dispenser.
- Add fresh iced coffee to beverage dispenser every morning
Disassembling Refrigerated Beverage Dispenser
- The beverage dispenser must be disassembled and washed, rinsed, sanitized, and air dried nightly
- Turn off the dispenser
- Remove the lid
- Remove the white paddle by lifting it straight up
- Pull stainless steel valve out by lifting straight up
- Remove dispenser lever
- Pull on release flap to loosen the storage container. Once loose, remove storage container.
- Under the storage container, remove the gasket
- Remove the drip tray
- Take all pieces to sink area
- Wash, rinse, sanitize, and air dry all parts
- Return to dispenser, Wash, Rinse, Sanitize, and air dry the base (where gasket was) and spindle
- Once everything has air dried, reassemble for next day’s use
Close
- Discard any iced coffee mix or coffee/sugar mixture on discard date
- Restock cups and lids
